I had the
pleasure of chatting with the ever so lovely Maryanne Keeney, one of the representatives of the hotel, and got some great information that I am thrilled to share with all my fellow Travelites:)

Famed UK cocoa grower and chocolatier, Hotel Chocolat has over 50 shops
worldwide, but only now can it claim to have the world’s first chocolate hotel. The newly launched Hotel Chocolat, the first boutique hotel on a working cocoa estate has recently opened in St. Lucia. It's nestled in the Piton Mountains, 1,000 feet above sea level. The 14-room hotel offers sweeping views of the Caribbean Sea with luxury amenities, including a rare cocoa themed restaurant, The Boucan. The hotel offers an unparalleled agri-tourism guest experience that undoubtedly will become a treasured world destination for gourmands and chocolate connoisseurs alike.


The Boucan is unlike any restaurant visited and serves Cacao Cuisine that harmoniously weaves cocoa into every dish. The menu includes delicious flame grilled Cacao Marinated Red Snapper and King Crab Verrine with cacao guacamole.


Chocolate Classes for Adults --Unique only to the Rabot Estate, the Tree-to-Bar Experience is an exclusive opportunity for guests to create their own chocolate. Guests can take part in the cocoa harvest, learn about the production of chocolate, and make their own chocolate bars and truffles. The tour includes all the stages from the seedling nursery to the fermenting room. A full day program for guests is only US $150 and a three-hour short version for visitors is a mere $125.

Green Initiatives and Sustainability -The Hotel Chocolat honors chocolate based on the company’s deep brand philosophy of originality, authenticity and its ambitious Engaged Ethics program. The estate’s social responsibility distinguishes it among the world’s chocolatiers by providing technical practices to its cocoa communities in both Saint Lucia and Ghana. Both the hotel and restaurant's green practices include the harvesting of rainwater instead of bottled (plastic water bottles are not allowed) and sourcing sustainable goods and ingredients from island suppliers. Solar energy is used to heat showers and highlight the landscaped grounds.
